Makes: 1 6-8
Description: Gooey cheesy filling casserole that kids will even enjoy.
Ingredients:
2 large
sweet potatoes, shredded
2 large
zucchini, sliced thin
1 large
white onion, sliced thin
1 cup
sour cream
1/4 cup
heavy cream or half and half
1/2 cup
shredded sharp cheddar cheese
1/2 cup
shredded pepper jack or Monterrey jack cheese
1/4 cup
Parmesan cheese
1 cup
panko bread crumbs
2 tbsp
melted butter
1 tbsp
vegetable oil
Instructions:
Preheat the oven to 350 degrees F and grease a 4-quart casserole dish.
Heat the oil in a large skillet over medium heat. Saute the sweet potato, zucchini, and onion until soft. Transfer to a bowl and stir in the cheddar, pepper or Monterrey jack and sour cream. Add salt and pepper, to taste and place into greased casserole dish and set aside to make topping.
For the topping mix parmesan cheese, panko bread crumbs, and melted butter. Sprinkle mixture over casserole and place in oven for 20 - 25 min.
