Makes: 4 Servings
Description: This is my favorite, quick and healthy recipe for a delicious meal for a busy woman!
Ingredients:
2 fillets
Haddock or Cod
1
Lemon
1 cup
Milk
1/2 cup
Parmesan Cheese
1/2
(Italian) Break Crumbs
Pinch
Salt
1/3 cup
Melted butter (or substitute)
Instructions:
Place haddock fillets in a container, salt both sides and pour milk over fillets to cover. Leave in the fridge for 15 minutes to an hour (depending on how much time you have).
In the meantime, mix together the bread crumbs and Parmesan cheese in a bowl. Then, slice the lemon and cover the bottom of a glass baking tray with it. Melt the butter.
Remove fish fillets from the milk, and coat the fillets in bread crumb/cheese mix, lay on top of the lemon. Pour melted butter on top of the fillets. Bake on 500 for 15 minutes! Enjoy!!

These delicious treats can be eaten as finger-food. I've served them at many brunches and as appetizers for other occasions. They also freeze well.
