Olive Oil Garlic Mashed Potatoes

Makes: 8 servings

Description: Easy creamy low-fat & vegan garlic mashed potatoes

2 lbs  russet potatoes
5  cloves of garlic
1/4 cup  extra virgin olive oil
1- 1 1/2 cups  vegetable broth
2 teaspoon  garlic salt
salt & pepper  to taste

Instructions: Peel potatoes and cube them into 1 inch pieces. Add them into a large pot along the peeled garlic, top it off with water until the potatoes are completely covered. Bring the pot of potatoes to a boil and turn the heat to medium allow the potatoes to cook for 15-20 minutes. Around 15 minutes check if potatoes are tender.

When the potatoes are cooked, drain the potatoes with the garlic and add them into a large bowl. Drizzle in your olive oil and begin to mash the potatoes with your masher or fork. Slowly add in the vegetable broth. You may need more or less then amount given depending of the texture you like your mashed potatoes.

When you have reached your desired mashed potato consistency, add the garlic salt and salt & pepper to taste.
