I love to make gumbo with all the meats! I make a huge pot so we can eat it for days!

Shrimp etouffee
Gumbo, fried catfish, coleslaw and hush puppies along with homemade king cake make my mardi Gras table complete!
Cajun Corn Maque Choux, Red Beans & Rice, Chicken & Sausage Gumbo, King Cake (yay!), and Sazerac.
Eating beignets!
We always make an awesome shrimp creole and rice and jambalaya. It's so delicious and spicy but soo good and fun. I Love it. Wish I could have it more often.
King cake. We just love making it and wondering who is going to get the baby in the cake. Would it be King of Mardi Gra or Queen? BTW - where are the recipes for theses wonderful dishes?

I always make beignets for breakfast
Our family tradition for Mardi Gras is making a Spicy Craw Fish boil with Corn and Potatoes. We also make Stuffed jalapenos with Shrimp and Cream cheese wrapped in bacon on the grill. For the Adult beverage it is Frozen Strawberry Margaritas made using fresh berries. I coat the rim of each glass with Festive Colored salt and top it off with a Paper Umbrella. Mardi Gras is a considered a Holiday in our Home.
