We have Christmas dinner on the 24th, so for breakfast we make a leftover scramble..this may vary by the ingredients you have from the night before. Ingredients: 1 cup leftover ham diced, 6 eggs beaten, 1/4 cup of onions and peppers, 1/4 cup diced black olives. Add all ingredients except eggs to large pan and heat over med. heat. Saute peppers and onions until soft and golden brown, add eggs and keep moving around pan so nothing sticks. Remove from pan as soon as eggs are done, do not over cook. Serve over left over biscuits.

My favorite Holiday dessert would have to be Andes Mint Pie. It takes a while to make but it is so worth it. 1 package brownie mix Bake as package directs in a spring form pan. 6 eggs seperated 3/4 Cup Heavy whipping cream 1 Cup melted andes mints Beat egg whites untill stiff. Beat cream in seperate bowl untill stiff. Put egg yolks in double broiler and wisk untill frothy, add the andes mints and melt. Fold the egg whites and cream to the mixture. Place on top of baked brownie still in the spring form pan. Refrigerate over night. 1 Cup semi sweet chocolate chips 1/4 Cup milk Melt over medium heat ( I like to to do half choc. chips and half andes mints) Pour on top of your brownie and the fluffy mixure. Decorate with additional andes mints crush, or shaved. Refrigerate, take out of spring form pan and enjoy. It is a very rich decadant dessert and is so delicious. Hope you enjoy it as much as I do. It is time consuming but so worth it.

Every year, we have a beef rib roast for Christmas dinner. It smells heavenly while roasting,and tastes incredible. Need: One 2- to 4-rib roast of beef, Flour , Salt , Black pepper Remove the roast from the refrigerator 2½ to 4 hours before cooking. Preheat the oven to 500 degrees. Place the roast in an open, shallow roasting pan, fat side up. Sprinkle with a little flour, and rub the flour into the fat lightly. Season all over with salt and pepper. Put the roast in the preheated oven and roast according to the roasting chart below, timing the minutes exactly. When cooking time is finished, turn off the oven. Do not open the door at any time. Allow the roast to remain in the oven until oven is lukewarm, or about two hours. Number of ribs, or weight without ribs: Roasting Time at 500 Degrees 2 ribs or 4½ to 5 lbs. = 25 to 30 mins. 3 ribs or 8 to 9 lbs. = 40 to 45 mins. 3 ribs or 11 to 12 lbs. = 55 to 60 mins. After the roasting - all that's left is the anticipation.

My families favorite holiday breakfast is stuffed french toast. It is a bit time consuming. I only make it once a year! The french toast is stuffed with a cream cheese mixture and cooked like regular french toast with a few spices added to the egg mixture! You can serve it with regular syrup or a flavored syrup. I also cook sausage links to go with the french toast. To top off this meal, a good cup of coffee goes very well!

CHOCOLATE-MINT PIE*1 frozen pie crust, 1 1/4 c milk,1 box chocolate pudding/pie mix,1 c semisweet chocolate chips,1/2 c milk,20 large marshmallows,1 c whip cream,1/2 tspn peppermint extract,6 tbsp crushed peppermint candy*Heat oven to 400 deg. Bake crust as directed for 1 crust pie shell. Cool about 30 min. In 2-qt saucepan,mix 1 1/4 c milk & pudding mix;cook over medium heat. Lower heat to low;keep cooking while adding chocolate chips,stir until melted. In 3-qt saucepan,heat 1/2 c milk & marshmallows at low heat,stir constantly,until melted. Refrigerate about 30 min,stirring on/off,until mix mounds dropped by spoon. In chill medium bowl,beat cream & extract on high speed until stiff. Gently stir in marshmallow mix. Gently stir in 1/4 c of the crushed candies. Spread chocolate mix in cooled shell;top with whipped cream mix. Fridge til set,4 hrs. Sprinkle rest of 2 tbsp crushed candies on top. Store in fridge. Squeeze syrup in zigzag pattern on plates;top with pie.

The holidays are stressful, so my favorite recipe usually is something that has few ingredients so I can memorize it. I like to make chow mein noodle candy for friends/neighbors. 1 can chow mein noodles 12 oz chocolate chips 8 oz butterscotch chips 1 square baker's chocolate Melt all items except noodles in a double boiler. Then, mix in chow mein noodles. Drop onto cookie sheet and let harden in the fridge!

Breakfast Casserole 8 frozen hash brown patties 4 cups shredded Cheddar cheese 1 pound cubed fully cooked ham 7 eggs 1 cup milk 1/2 teaspoon salt 1/2 teaspoon ground mustard Directions Place hash brown patties in a single layer in a greased 13-in. x 9-in. x 2-in. baking dish. Sprinkle with cheese and ham. In a bowl, beat eggs, milk, salt and mustard. Pour over ham. Cover and bake at 350 degrees for 1 hour. Uncover; bake 15 minutes longer or until edges are golden brown and a knife inserted near the center comes out clean.

Favorite Hoilday Dessert (gets me out of the kitchen fast!) No Bake Sprinkle Cookies! 2 c. sugar, 1/2 c. milk, 1/2 c. butter, 3 tbsp cocoa, 1/2 c. peanut butter, 3 c. oatmeal, 1 tsp vanilla. Mix together sugar, milk, cocoa & butter. Cook until well blended (3 min). Remove from heat, add PB, oats & vanilla. Stir until thickens. Drop cookie dough ball size onto wax paper, cover w/ sprinkles.

I really enjoy this carrot cake recipe for dessert, or breakfast. The boiled frosting sinks into the cake to make a moist, delicious cake. CARROT CAKE 2 CUPS FLOUR 2 TSP SODA 2 TSP CINNAMON ½ TSP SALT 3 EGGS ¾ C. BUTTERMILK 2 C. SUGAR ¾ OIL 2 TSP VANILLA 2 C. GRATED CARROTS (OR ZUCCINNI) 1 SMALL CAN OF PINAPPLE (WELL DRAINED) 1 C. COCONUT 1 C. CHOPPED NUTS MIX DRY INGREDIENTS, BEAT EGG, ADD OIL, BUTTERMILK, SUGAR, VANILLA, AND MIX. ADD TO DRY INGREDIENTS, MIX IN PINEAPPLE, CARROTS NUTS AND COCONUT. POUR INTO LIGHTLY GREASED AND FLOURED 13 X 9 PAN. BAKE @ 350 FOR 55 MINUTES. POUR FROSTING OVER CAKE WHILE HOT. BUTTERMILK FROSTING 1 C. SUGAR 1 CUBE BUTTER 1 TSP VANILLA 1 TSP SODA 1 TABLESPOON LIGHT CORN SYRUP 1 C. BUTTERMILK PLACE SUGAR, SODA, BUTTERMILK, BUTTER AND CORN SYRUP INTO PAN. BRING TO A BOIL. BOIL 5 MINUTES STIRRING AS NEEDED. REMOVE FROM HEAT AND STIR IN VANILLA, POUR OVER HOT CAKE.

My family LOVES this recipe for Christmas morning at breakfast!!! I got the recipe from my Nuwave oven recipe book!!! Sausage Balls: 3 cups Bisquick 2 cups grated cheddar cheese 1 lb. Ground pork sausage (can use hot or mild) Mix all ingredients together. If not moist enough, add a little water. Form into 1" balls. Bake at 400 degrees for approximately 10-12 minutes. For those with a Nuwave oven- place on silicone liner or a pan that is oven safe. Bake for 10 minutes on HI level. Serve warm. These also freeze well before or after baking them!! Hope everyone enjoys these like my family does!!

My favorite dessert is something light: Berries and Cream. Soften one pint of low fat French vanilla ice cream. Fill large wine glasses with ¾ cup frozen mixed berries. Finely crush enough madeline cookies to make one cup. Top berries with ice cream and crushed cookies and serve.

Angel Food dessert 1 (10 inch) angel food cake 2 (8 ounce) packages cream cheese, softened 1 cup white sugar 1 (8 ounce) container frozen whipped topping, thawed 1 quart fresh strawberries, sliced 1 (18 ounce) jar strawberry glaze Crumble the cake into a 9x13 inch dish. Beat the cream cheese and sugar in a medium bowl until light and fluffy. Fold in whipped topping. Mash the cake down with your hands and spread the cream cheese mixture over the cake. In a bowl, combine strawberries and glaze until strawberries are evenly coated. Spread over cream cheese layer. Chill until serving.

My favorite dessert at Christmas is the cookies- there are two that my mom has made for years- as long as I can remember- one is a date ball that you bake in a pan then roll into balls and then roll in granulated sugar- the past couple years I got lazy and just cut them in squares and had them that way-no rolling in the sugar- I actually liked them better. The other cookie I can't remember the name but they are a anise tea cookie that you roll out with a special rolling pin that has the designs on it. These are suppose to be baked weeks a head of time. I haven't done any baking yet but I think these are two that I will make time to bake this year, even if it is for our New Years eve dinner.
