Makes: 24 cupcakes
Description: These spooky cupcakes are the perfect accessory to any halloween event!
Ingredients:
2 cups
flour
1 1/4tsp
baking soda
1 tsp
salt
1 tsp
cocoa powder - unsweetened
1 1/2 cup
veggie oil
1 1/4 cup
buttermilk
3
eggs
1 1/2 cups
sugar
2 tbsp
red food coloring
1 1/4 tsp
white vinegar
4 tsp
vanilla extract
1/8 cup
water
2 pkg
philadelphia cream cheese
1/2 cup
butter (unsalted)
2 pkg (32oz)
powdered sugar
2 cups
chocolate rice krispies
1 package
gummy eyeballs
1 package
sugar coated gummy worms
1 container
red cake decorating pen (i use Wilton's red icing writer from Michael's)
Instructions:
Cupcakes: Mix together flour, baking soda, salt, and cocoa powder. Set this aside.
In a mixer fitted add oil, sugar, and buttermilk. Then add eggs, food coloring, vinegar, 2 tsp vanilla (the other 2tsp are for the frosting) and water. Mix this well. Then add the dry ingredients you mixed together earlier. Be sure not to over mix.
Bake at 350 degrees for 20 to 30 minutes or until the toothpick comes out clean. Let cool before frosting.
Frosting: In a mixer add the cream cheese, butter, and 2 tsp vanilla, until well blended. Add the sugar and blend until light and fluffy.
Decorating Using a butter knife cover each cupcake in icing. I wipe the knife after each cupcake to prevent cake from mixing in the icing.
- Eyeballs: place the eyeballs in the center and make red veins stemming from the eyeballs. The squigglier the better!
- Worms: dip each cupcake in the chocolate rice krispies. Then using a toothpick push the worms into the cupcakes.Can add some more rice krispies on top.
