Peanut Butter & Banana Chocolate Drip Cake

Makes: 12 Slices

Description: Decadent chocolate cake with Peanut Butter Frosting, fresh banana filling, and a delicious chocolate ganache drizzle.

Ingredients:
1 Box  Devils Food Cake Mix
3  Bananas, Diced
1 Cup  Unsalted Butter, Softened
1 Cup  Creamy Peanut Butter
3 Cups  Powdered Sugar
1 Tsp  Vanilla
1/2 tsp  Salt
3 TB  Heavy Cream
4 oz  Semi Sweet Baker's Chocolate
4 oz  Heavy Cream

Instructions: Prepare two 8 or 9 inch round layers of Devils Food Cake according to box directions. Cool completely.

Prepare Frosting:
Combine butter & peanut butter in a large bowl, beat with mixer until creamy. Add powdered sugar 1 cup at a time, until thoroughly mixed. Add vanilla & salt. On low speed, add cream 1 TB at a time until fluffy / desired consistency.

Prepare Chocolate Ganache:
Chop chocolate bar into fine pieces, place in glass bowl, pour in heavy cream. Microwave 30 seconds & stir, repeat a few times until completely smooth (all chocolate melted) but do not overheat. Set aside to cool.

To build the cake:
Pipe a thick circle of frosting along the top outer edge of the first layer of cake (outline, to keep the filling in the cake). Pour ¼ cup of ganache in the center & spread evenly, but avoid touching the frosting. Pour in diced bananas & spread evenly. Place 2nd layer of cake on top. Frost entire cake generously with frosting. Pour remaining ganache on top, spread gently & evenly with back of a spoon, allowing it to run down sides of the cake. Refrigerate 10 minutes to let ganache solidify, then take it back out. Pipe an edge around the bottom of the cake & 5 large rosettes on top of the cake.
