Soup is on in just 20 mins. This is an easy to make soup with some great flavor that will taste homemade, even though you can use some shortcuts (like a rotisserie chicken).
Low sodium chicken broth
Fresh lemon juice
Dried bay leaf
Medium carrots, chopped
Spaghetti, broken into 2 inch pieces or Orzo
Diced, cooked rotisserie chicken
Grated Romano Cheese
Chopped fresh flat leaf parsley
In a large stockpot, bring the chicken broth, lemon juice, and bay leaf to a boil over medium high heat. Add carrots and simmer until tender, about 5-8 minutes. Add pasta and cook until tender, 5-5 minutes for spaghetti, longer for orzo - stirring occasionally. Add the chicken and heat through, 2-3 minutes. Remove bay leaf. Add most of the cheese and the parsley and stir. Add kosher salt to taste. Serve in bowls and garnish with more cheese and fresh parsley. Yum!
