This is a healthy and fast lunch.
chopped fresh parsley
cooked brown rice
Reheat rice and boil a egg. While these are cooking, rinse and chop parsley. Place parsley in bowl and add avocado. Mash together with fork. Add hot rice and combine. Add sliced egg. Enjoy!
