Eggplant Parmesan

Makes: 6 servings

Description: I LOVE eggplant! There is a way to cook it though! If you do not cook it properly it can taste bitter. I like to broil mine and italian breadcrumbs make it a fast and easy dish for any night!

Ingredients:
1/2 Cup  Italian Breadcrumbs
1  Eggplant
1/4 cup  Mozerrella Cheese
1 box  dry spaghetti
1 can  premade pasta sauce

Instructions: Cut the eggplant into about 1 inch circles. Get out a loarge pan and set the over to 350 degrees Broil. Lay each piece of eggplant down on the pan and broil for ten minutes. Flip the eggplant pieces and sprinkle breadcrumbs over each piece. Sprinkle mosseralla cheese on top of that. Broil for 7 minutes. Bring a pan of water to a boil and cook the spaghetti for 8 minutes or until done. Heat the pasta sauce.

This was a very fast and easy recipe! When you have time, it tastes even better to make your own pasta sauce and add lots of fresh basil and garlic.
