Description: My kids don't like spicy foods yet but I love enchiladas. I also shy away from preservatives so I love that this recipe is possible without using any. I used Fresh Direct spice rub and Dinosaur BBQ sauce but feel free to swap in your own favorites.
Ingredients:
1 lb
boneless, skinless chicken breasts cut into bite size pieces
2 tbsp
FreshDirect Everything Rub or spice mix of your choice
2 tbsp
vegetable oil

corn tortillas
28 oz
canned crushed tomatoes
1/2 cup
Dinosaur Honey Garlic BBQ sauce
1 cup
grated monterey jack cheese
Instructions:
Heat vegetable oil in a skillet. Add chicken pieces and spice rub and saute with medium heat until chicken is cooked through.
In a medium saucepan, mix together crushed tomatoes and bbq sauce. Cover saucepan and let simmer under medium low heat for 30 minutes.
Preheat oven to 375 degrees. Transfer 1/3 of the sauce to a baking dish, enough to well coat the bottom of the dish.
Heat each corn tortilla in a skillet until they are flexible enough to roll.
Assemble enchiladas by placing chicken mixture in a corn tortilla, rolling it and placing it in the baking dish. Cover enchiladas with the remaining sauce and the grated cheese.
Bake for 30 minutes and serve.
