Makes: 1 Loaf
Description: Banana bread with coconut and some additions.
Ingredients:
1/2 tsp
Vanilla extract
1 cup
Mashed banana
1/2 cup
Melted butter
1 cup
White sugar
2
Eggs
1/2 cup
Flaked coconut
1 1/2 tsp
Baking powder
1/2 tsp
Baking soda
1/2 tsp
Salt
1/2 cup
Chopped walnuts
Instructions:
Cooking Directions
Set oven to 350F.
In a large bowl mix coconut, flour, baking soda, baking powder, salt, and chopped walnuts. (I actually used an end of trail mix in this, which contained dried cranberries and cashews. I also added in some white chocolate).
In the mixer bowl, mix together eggs until light and frothy, then add sugar and melted butter.
Add mashed banana and vanilla extract. After that is mixed, add flour mixture and stir enough just to combine.
Add to bread pan. (I used a 9x5x3 loaf pan) and bake for 1 hour, or until a toothpick inserted in the center comes out clean.
Take out of oven and let it cool for 10 minutes then take out of pan and leave to cool.
