Cold Weather = Warm Soups

I am a huge soup eater and could eat it year round. But when it is cold outside I can't seem to get enough! My favorites to serve up on a cold day is Pasta E. Fagioli, chilli, or potato soup. What are some of your favorite soups to warm you up on a cold winters day? Or are you they type that likes a chilled soup in the summer such as cucumber soup?

I am simmering some soup right now. I prep all my fresh vegetables for the soup and salads. Saute the soup veggies with olive oil, salt & pepper. I feel this brings out more flavor. I like to use no fat, low sodium chicken broth then add spinach at the end. I bring soup and salad to work for lunch, or enjoy it when I get home late from work.

I am glad that there are so many soup lovers out there just like me. I will have to try the garbage soup and the vegetable soup with short ribs for sure. I have not tried pea soup yet, but I always hear how wonderful it is. I may have to break down and make some this weekend.

I love to make lemon rice soup or lentil couscous soup. They are both warm and full of grains to keep you full.

Our favorite is White Chicken Chili. However last weekend I wanted to throw together a soup in the crock pot with stuff I had. We ended up eating the best Chicken Tortilla Soup ever! I threw in some raw chicken tenderloins, 1 can chopped organic tomatoes, 1 can green chilies, 1 can kidney beans, 1/2 packet of taco seasoning, some water and chicken bouillon. After the chicken cooked I shredded it and added it back to the soup. We topped with shredded cheese, sour cream, and crushed up tortilla chips. SOOO YUMMY!!!

Lentils and and Sausage is a favorite of mine. You can spice it up or calm it down depending on the mild or hot sausage you add.

I love soup! Tomato or any kind I love! chicken gnocchi at Olive Garden is my favorite! yum! I could eat soup year round.

I love soup, and for me it's a MUST, especially in the Winter time, but unfortunately my hubby isn't much of a fan... I do make it myself every now and then in a large batch in the crock pot and then freeze some, otherwise I just buy quality canned varieties.

My favorite soup is my husbands bean soup. He makes it using beans of course, ham, carrots, onion, and potatoes. It is soooo yummy.
