One of our favorite tips to make busy weeks easier is to plan meals and do some prep in advance. It’s not as daunting as it sounds – especially when you have the right tools in the kitchen to help.
We’ve been using Rubbermaid® BRILLIANCETM storage containers, which make life so much easier. First of all, the containers are 100% leak proof, so they keep your fridge nice and clean. They’re crystal clear and stain-resistant – so you can always see what’s staying nice and fresh inside each container. Keep reading to find out how to enter our giveaway to win a Rubbermaid BRILLIANCE 10-piece set for yourself!
We’ve put together an easy three-night meal plan with the ingredients and prep work. So while you cook the first two meals, you’re helping yourself get meal #3 ready to go too! These are so easy, you don’t even need a full recipe.
3 Easy Weeknight Meal Ideas
#1: Turkey Tacos
Get a quick and easy taco kit, and substitute ground turkey for ground beef. Follow the package instructions, but double the amount of turkey (2lbs) that you brown. After browning, save half of the turkey in a Rubbermaid BRILLIANCE container (you’ll use it later this week!). Add taco seasoning to the remaining turkey and simmer, then finish the tacos with your favorite fixings like sour cream, salsa, shredded cheddar and lettuce.
#2: Pork Tenderloin with Brown Rice & Broccoli
Create a quick spice rub for pork tenderloin by combining your favorite seasonings. Try one part each of cumin, ground pepper, garlic powder, oregano, salt, and ground pepper – or mix it up depending on your preferences. Cover a boneless pork tenderloin in the spice mix, then sear it with some olive oil on the stove. Pop the pork in the oven at 350 for 20-30 minutes, until it is pink in the center. While it cooks, make a double batch of brown rice on the stove and steam a double batch of broccoli. Package up half of the brown rice and half of the broccoli in Rubbermaid BRILLIANCE containers for dinner tomorrow. Serve your finished pork with the brown rice, and broccoli – add lemon and parmesan cheese to make the broccoli extra tasty.
#3 Turkey & Veggie Stir Fry
Your third dinner is already nearly done! Chop up some garlic and ginger. Add to a large wok, with a few teaspoons of olive oil. Chop up some baby carrots into bite sized pieces, and add to the wok – let these cook for approximately five minutes or until they are soft and cooked through. Head to your fridge and pull out your BRILLIANCE containers – add the leftover brown rice, cooked ground turkey, and cooked broccoli to the wok. Add soy sauce, teriyaki sauce, and sriracha to taste – start with a few tablespoons and then adjust to your preferences. Mix well.
When dinner’s over, use Rubbermaid BRILLIANCE to package up any leftovers. Each container has vents so you can microwave with the lid on and latches open, without worrying about splatters!
