Soup/Chowder

The perfect meal to warm you up in fall is a hearty bowl of soup. And many soups are quick to make. Take, for example, this Cheesy Vegetable Chowder submitted to our website by MyLittlePrincessK. It takes just 15 minutes to prep and is a complete all-in-one meal. This one is vegetarian, but feel free to add meat to it. Tip: buy a rotisserie chicken from the grocery store and it will take no extra time to add to the chowder.

One pot-meals

When you are busy with activities, one-pot meals are the way to go. It's less time cooking -- and less time washing! Cooking in one-pot does not have to be boring. Slow Cooker

One of my favorite quick and easy dinners is a pot of vegetable beef soup. I always use a packet of soup starter, add extra veggies and cooked meat. I can usually stretch it out a few days by adding more veggies, rice, and stock as the week progresses.
