Description: Easy, healthy and quick. Great for a weeknight meal.
Ingredients:
1
Large Zucchini, sliced & quartered
1 clove
Garlic, chopped
4 TBSP
Extra Virgin Olive Oil
1 cup
Whole Wheat Fusilli or Rotini Pasta
1/2 cup
Fat-free Feta Cheese
to taste
Salt
to taste
Freshly Ground Pepper

Lemons, juiced
Instructions:
Cook whole-wheat pasta according to instructions.
Meanwhile, heat 2 TBSP olive oil in a large skillet on low/medium heat. Chop 1 clove of garlic and add to olive oil. Brown garlic for 1-2 minutes. Add sliced, quartered zucchini pieces to skillet and combine with garlic & olive oil. Add salt and pepper. Let these cook until browned but keep them firm, not mushy, approximately 6 minutes. Add lemon juice and remaining 2 TBSP olive oil to skillet. Add cooked pasta, tossing thoroughly with other ingredients. Mix in feta cheese and additional salt & pepper to taste.
