This salsa/dip is a huge hit at potlucks and family functions. It's fresh and healthy so you never feel bad dipping a few chips in or adding it to entrees, breakfast burritos or topping grilled meat. I got the recipe years ago from a friend and have tweaked it to my preferences over the years. Feel free to add/subtract tomatoes or avocados to taste.
Bunch green onions, sliced
Bunch cilantro, chopped
Can corn, drained
Can black-eye peas, rinsed and drained
Can black beans, rinsed and drained
Small can black olives, chopped
Dry Italian Dressing Mix, prepared as instructed on package
Mix all ingredients together. Chill and serve with tortilla chips.
