Mixed Vegetables and Rice

Makes: 4 servings
A top-of-the-stove, good-enough-for-company side dish combining starch and vegetables.
uncooked regular or long-grain rice
2 1/4 Cups
approx. 3 Tbsp.
dry onion soup mix (from packet)
frozen mixed vegetables
Combine the rice, water, soup mix and salt in medium saucepan. Bring to a boil. Add the frozen vegetables and return to a boil. Reduce heat; cover and simmer for 15 minutes. Check. Cook until the rice and vegetables are tender. Put in serving dish and serve.

The Tavern, as it was called by folks in my town, was a picturesque resturant with wonderful food. The eggplant casserole was a favorite.
