Grilled Steak

Makes: 2 servings

Description: When making steak, simple is best. This fool-proof recipe can be done on an outdoor grill or on a grill pan on the stove.

Ingredients:
2  8-10 oz. steaks - hanger or sirloin
4 Tbsp  Extra virgin olive oil
To taste  Kosher salt
To taste  Ground black pepper

Instructions: Heat grill or grill pan at medium/high heat. Rub the top of each steak with olive oil, then rub salt and pepper onto the steak. Place steaks oil side down into hot pan and as they start to sear, rub oil, salt and pepper onto the other side of the steak. Let steak sear for 4 minutes per side to cook to medium-rare. Cut into steak to test doneness, time may need to be adjusted depending on size and cooking preference. Take off the grill wrap in tin foil. Allow steak to rest for 5 minutes before serving.

Makes me want to fire up the grill just looking at it--and steak is at its best when simply prepared!

Agreed that simple is best. We use a similar recipe, but without the olive oil, and like to finish the steak in the oven at 375 for about 4 minutes. A cast iron pan works great.
