Makes: 6 servings
Description: An alternative to heavy pasta, these ravioli are made with won ton wrappers to reduce carbs and calories. A fusion of a traditional Italian style pasta and a traditional Mexican American favorite, this dish is a healthy alternative to a high fat comfort food. Tastes like Chicken Enchiladas without a lot of the fat!
Ingredients:
1 lb
Chicken Breast Tenders
2 cups
Fat Free Cheddar Cheese, separated into 1 cup portions
1 can
green chilis
6 tbsp
fat free sour cream, separated into 2 and 4
12 tbsp
salsa, separated into 6 and 6
1 can
fat free cream of chicken soup
40-50
won ton wrappers
to taste
cumin
Instructions:
1. Boil chicken tenders in water until completely cooked. Remove from water and allow to cool completely.
2. Once chicken is cool, chop as finely as possible and put in large bowl. Add one cup cheddar cheese, one can green chilis, 2 tbsp sour cream, and 6 tbsp salsa. Mix well.
3. To form ravioli, lay out won ton wrapper. Spoon some of chicken mixture onto one half of wrapper. Dip your finger in water and go around the entire edge of won ton wrapper. This will make the wrapper slightly sticky so you can seal it. Fold the wrapper in half, making a pocket. Fold up the three edges to completely seal, adding a tiny amount of additional water if necessary. Lay on wax paper, and repeat with remaining filling and won ton wrappers.
4. If you are boiling the ravioli, put them into a pot of boiling water for about 5-7 minutes, then drain.
5. If you decide to bake the ravioli instead, spray a cookie sheet with cooking spray, and lay ravioli on cookie sheet. Bake at 350 for 10-12 minutes, ravioli should get firm, but not brown. Remove from oven.
6. While ravioli are boiling or baking, add the can of cream of chicken soup to a medium sauce pan. Add one cup fat free cheddar cheese, and heat over medium heat, allowing cheese to melt. Be careful the cheese does not scorch in the saucepan.
7. Add the 4 tbsp fat free sour cream, 6 tbsp salsa, and cumin to your desired taste. Continue to heat over medium heat until completely blended and melty.
8. Serve ravioli with sauce on top.
