Avocado Goat Cheese Crostini

Makes: 6 servings

Description: Quick and easy to make - and so delicious. You won't believe you can make this appetizer with so few ingredients. Great to bring to a party or for entertaining!

Ingredients:
1  Avocado
5 oz  Goat Cheese (soft)
1 tsp  Extra Virgin Olive Oil
1 Tbsp  Lemon juice
To taste  Salt
To taste  Freshly ground pepper
1  French baguette

Instructions: Preheat oven to 350. Pit and peel avocado. Mash in a bowl. Add goat cheese, lemon juice, and olive oil, salt and pepper to taste. Stir ingredients until blended. Slice bread and brush with olive oil. Bake at 350 for 6-8 minutes, until crisp. Spread with avocado goat cheese mixture and serve.
