Baked Prosciutto and Egg Cups

Makes: 6 Servings

Description: A perfect brunch and/or potluck recipe that is easy to make!

Ingredients:
6  thin slices prosciutto
2 oz.  fresh mozzarella cheese, torn into small pieces
3  large basil leaves, torn
6  large eggs

Instructions: Spray 6 cups of a muffin tin with cooking spray. Fill each cup with a prosciutto slice. Using half the cheese and basil, divide it among each cup. Crack an egg into each cup, then sprinkle the remaining cheese and basil around the eggs.

Bake at 375° until set, about 15 minutes; let rest for 5 minutes. Season with pepper. Run knife around cups to unmold.

I served the cups over buttered toast and with a side of fresh fruit.

Tip: do not add any salt. The prosciutto is salty enough on its own.

You could also make this recipe and add spinach, green onions, or anything else you could think up!
