    Peanut butter is a staple in our home that we are never without. Since my oldest daughter is hypoglycemic, it provides a great source of protein that she has no problem enjoying and keeps her energy levels up.

    Peanut butter is a good source of protein and is very versatile. I love it on rice cakes and celery. I do recommend the lower fat version because regular peanut butter is really fattening.

    You left out an option--in soup! I came across a recipe last night that uses peanut butter to thicken up and add an interesting (yet not obvious) flavor to chicken-vegetable soup. I think it was based on an African soup, but some folks modified the recipe to be more Thai. I haven't tried it yet, but I just might . . .
