I never knew how to make some of these exotic dishes, and this cookbook is a wonder. It makes the complex easier to understand and wonderful meals come out of it.

Chanterelle, now closed, was one of the best and most expensive restaurants in New York City. The recipes from this book are not what was served to guests, but the daily meal served to the cooks and waitstaff who worked at the restaurant. No matter how fancy the food in a restaurant, the staff likes comfort food. so there's nothing fancy here, just good, hearty fare.
