What spring/summer food are you craving now that winter is almost done?

I live in a cold climate so I can't wait to start my garden. I most look forward to the tomatoes and greenbeans! Do you have a favorite food or better yet, favorite spring/summer recipe to share?

Eggplant and zucchini and tomatoes, and sweet melons for dessert. Also all the fresh herbs from the garden like basil, tarragon, summer savory, parsley and cilantro.
