    Mexican Lasagna - Layer refried beans, hamburger (precooked), shredded cheese & salsa in baking dish. Top with tortilla chips and bake at 350 for about 20-30 minutes.

    Dutch Babies made in a cast iron skillet are a great and comforting weekend breakfast item in our house! For the winter months, top with spiced stewed apple slices, pears or peaches. Super easy to stew fruit for a Dutch Baby Pancake topping, just slice the fruit you want to use, throw in a saucepan with an inch or two of fruit juice and a few shakes of nutmeg, cinnamon, clove or other wintery seasoning. Fruit will be soft and ready to serve in about 10-15 minutes. Yum.

    Fall Hearty Crockpot Chicken: Combine 6 potatoes (peeled and cut into chunks), two onions (peeled and quartered), a bag of baby carrots, and 8-12 chicken thighs in a large crockpot. Pour 1 1/2 C chicken broth over ingredients, then salt and pepper to taste. Cook on low for 6-8 hours. This is simply the easiest dinner either...and it's delicious too! Add green peas (we prefer frozen) or a green salad for a little crunch, and you have a wonderful, homey fall dinner.

    My favorite fall recipe to make is Pumpkin Pancakes! They are so flavorful and easy to make and great for not only breakfast, but a comforting dinner too! PUMPKIN PANCAKES Ingredients: 2 cups dry boxed pancake mix, 1 1/2 cups water, 3/4 cup canned pumpkin, and 1/2 teaspoon cinnamon. RECIPE: Spray non-stick cooking spray onto griddle or frying pan and preheat on medium high heat.In a large bowl, mix dry pancake mix and water until well blended. Add pumpkin and cinnamon and continue to mix until thoroughly blended. If mix is a little too thick add water, one tablespoon at a time. If mix is too thin, add dry pancake mix, one tablespoon at a time. Pour onto griddle or frying pan to desired size. When mix begins to bubble at the top, flip and continue to cook until golden brown on both sides. Serve with syrup and enjoy!

    How about a Super Simple Delicious Pumpkin Spice Mousse! 1 Box Jello Pumpkin Spice Instant Pudding. Beat 1Cup Cold Milk & Pudding Mix w/Whisk 2 mins. Stir in 1 Cup thawed Cool Whip. Spoon into 4 Dessert dishes. Refrigerate until ready to serve. Then Sprinkle 2 Tblsp. Brown Sugar over Desserts & top by sticking in a small Ginger Cookie before serving. YUMMY!!

    STUFFED GREEN PEPPER SOUP 1 CUP CHOPPED ONION CUP CHOPPED CELERY 1 CLOVE MINCED GARLIC 2 CUPS CHOPPED GREEN BELL PEPPER 2 TABLESPOONS OIL 1 POUND HAMBURGER 1 (16 OZ) CAN CRUSHED TOMATOES 1 (12 OZ) CAN TOMATO JUICE 2 BEEF BOUILLON CUBES CUP UNCOOKED WHITE RICE 3 CUPS WATER 2 TABLESPOONS PARSLEY 2 TEASPOONS WHITE SUGAR 1/4 TEASPOON SALT 1/2 TEASPOON PEPPER TEASPOON CHILI POWDER SAUTE ONION, CELERY, GARLIC AND GREEN PEPPER IN OIL UNTIL JUST TENDER. DO NOT BROWN. STIR BEEF INTO VEGETABLES; COOK UNTIL BEEF IS BROWNED. STIR IN RICE. ADD THE REST OF THE INGREDIENTS. COVER AND SIMMER 45 MINUTES OR UNTIL RICE IS COOKED. ADJUST LIQUID IF NECESSARY. YOU MAY ADD MORE CHILI POWDER OR SPICES TO YOUR LIKING.

    Fast and easy cornbread. 2 packages of Jiffy corn meal. prepare as directed on package. Pour 1/2 of cornmeal mixture into a greased 8 inch metal pan. Place slices of monterey jack cheese on top of cornmeal mixture. Pour remaining cornmeal mixture over cheese slices. Bake per directions on package. Yummy! For more adult palates, add a few slices of jalapeno peppers over cheese before topping with remaining cornmeal mixture.

    A co-worker brought this to work to share and it was gone in no time! Pumpkin Fluff: one 16 oz container of non-dairy whipped topping, 1 (5 oz.) packet of vanilla pudding, 1 can of pumpkin puree, 1 teaspoon of pumpkin pie spice. Mix everything together thoroughly and refridgerate until ready to serve. Great with ginger snaps or cinnamon graham crackers.
