My favorite fall recipe to make is Pumpkin Pancakes! They are so flavorful and easy to make and great for not only breakfast, but a comforting dinner too! PUMPKIN PANCAKES Ingredients: 2 cups dry boxed pancake mix, 1 1/2 cups water, 3/4 cup canned pumpkin, and 1/2 teaspoon cinnamon. RECIPE: Spray non-stick cooking spray onto griddle or frying pan and preheat on medium high heat.In a large bowl, mix dry pancake mix and water until well blended. Add pumpkin and cinnamon and continue to mix until thoroughly blended. If mix is a little too thick add water, one tablespoon at a time. If mix is too thin, add dry pancake mix, one tablespoon at a time. Pour onto griddle or frying pan to desired size. When mix begins to bubble at the top, flip and continue to cook until golden brown on both sides. Serve with syrup and enjoy!

Fall Hearty Crockpot Chicken: Combine 6 potatoes (peeled and cut into chunks), two onions (peeled and quartered), a bag of baby carrots, and 8-12 chicken thighs in a large crockpot. Pour 1 1/2 C chicken broth over ingredients, then salt and pepper to taste. Cook on low for 6-8 hours. This is simply the easiest dinner either...and it's delicious too! Add green peas (we prefer frozen) or a green salad for a little crunch, and you have a wonderful, homey fall dinner.

Dutch Babies made in a cast iron skillet are a great and comforting weekend breakfast item in our house! For the winter months, top with spiced stewed apple slices, pears or peaches. Super easy to stew fruit for a Dutch Baby Pancake topping, just slice the fruit you want to use, throw in a saucepan with an inch or two of fruit juice and a few shakes of nutmeg, cinnamon, clove or other wintery seasoning. Fruit will be soft and ready to serve in about 10-15 minutes. Yum.

My grandmother created this recipe while living on the farm in Indiana, hence the name, Hoosier Farms Potato Soup. It is a hearty, delicious, one-pot-meal my whole family loves. 1 Lb. Good Quality Ring bologna (Eckrich, Koegel. No red mushy stuff.) 6 Med. Potatoes. 1 Onion, diced. Milk. 1 Stick Butter (Margarine ok) 1/2 C. Flour. 1 Tsp. Salt. 1/2 Tsp. Pepper. Peel and chop bologna and potatoes. Cook in boiling water in large dutch oven or soup pot with onion till tender. Drain retaining water for prep. Set aside potato mixture and water. In pot, melt butter. Add flour and seasoning and stir over low heat till smooth and bubbly. Using 4 C of potato water and 4 C. of milk, gradually add liquid to pot, stirring constantly. Turn heat to medium and continue stirring till boiling. Boil and stir for 2 minutes, add potato mixture and turn heat to simmer. Serve with a salad and bread and butter.

My grandma (and now my aunt) has always made Waldorf Salad after we go apple-picking in the fall. There are several potential variations to the historic apples/celery/mayo recipe created by New York City's Waldorf-Astoria Hotel in the 19th century. We like adding walnuts, grapes, and lemon juice too!
