Description: Savory cheeses, beef or no beef upon preference, yellow corn tortillas, enchilada sauce, red hot, Tostitos corn chips
Ingredients:

your favorite enchilada sauce

toothpicks
to taste
onions
small can
green chilies
to taste
pepper salt cumin

yellow corn tortillas
Instructions:
Preheat oven 475°, start browning meat and adding seasoning.
While meat browns pour half of enchilada sauce into a glass casserole, gently soaking tortillas in sauce. Add a hint of red hot depending on how spicy you like it. Use half green chilies and onions to put in the dish with the enchilada sauce.
After meat is fully cooked, gently load meat and grated cheese on the tortillas, then place toothpick in tortillas for stability. Carefully roll it up so you don't break the tortillas.
After you fill the dish with rolled tortillas pour the rest of enchilada sauce on your dish. Add the rest of onions, green chilies and left over shredded cheese and meat on top of enchiladas.
When finished, grab the bag of Tostitos corn chips and crush them up and scatter on top, this makes the enchiladas have a nice crunch to them. Add more Red hot as desired on top of your finished work.
Put in oven for 15-20 minutes, until chips seem to be a bit golden. Wallah, delicious home made enchiladas. My mother in law has even admitted them being better than on the border. :D ENJOY.
