Makes: 4 servings
Description: This is my son's favorite thing I make.
Ingredients:
1 pound
boneless chops
4 tbsp
olive or coconut oil
3/4 cup
Progresso Italian Bread Crumb mix
3 tbsp
Cajun seasoning mix
1/4
Kraft Parmsean cheese
Instructions: Preheat oven to 375 degrees. Lightly coat an iron skillet(best results) with oil or non stick cooking spray. Mix the bread crumbs, Cajun seasoning and Parmesan in a bowl until blended well. Take the skillet and put on oven top on medium heat. Coat chops in oil and then press them into the dry mixture until coated completely. Brown both sides of the chops on the stovetop. Cover with aluminum foil and put skillet in oven. Cook for 20 minutes or until no longer pink in the middle.
Easy, one-pot meal of lamb chop and veggies - very tasty, and healthy too!
