White Chicken Chili

White Chicken Chili

Makes: 8 Servings

Description: Delicious chili alternative that my children eat, even my child who does not like beans.

2 to 3 cans  White Kidney Beans or Great Northern Beans
1 pound  Boneless, skinless chicken breast, chopped
1 large can  Chicken Broth
1 Jar  Salsa Verde
1 cup  Grated Mozzarella Cheese
2 tsp each  Ground Cumin, Chili powder, Dried Oregano, Minced Garlic
1  Medium chopped onion

Instructions: Cook chopped chicken and onion over medium heat in olive or coconut oil until lightly browned.

Add minced garlic and cook for 1 minute.

Add chicken broth, cumin, chili powder and dried oregano, and bring to a boil.

Add Salsa verde and drained beans.

Simmer for about 30 minutes. Garnish with mozzarella cheese, chopped green onion or chives.
