Makes: 4 servings
Description: This guacamole isn't your average guacamole. Roasted tomatillos mixed into the standard guacamole ingredients elevates the flavor to make it perfect for an appetizer with company.
Ingredients:
pinch
pepper
3
minced serrano peppers, ribs and seeds removed
1 t
salt
1/2 cup
chopped red onions
1/2 cup
freshly chopped cilantro
1
lime
1.5 lbs
Hass Avocados (about 3 large), peeled and pitted
1 lb
Tomatillos, husked and rinsed
Instructions:
Set oven rack to 4 inches below broiler and preheat broiler to High. Place tomatillos in an ovenproof tray and broil until tops of tomatillos are charred, about 7-10 minutes. Flip tomatillos with tongs and broil until other side is charred, about 5 minutes.
Let tomatillos cool and reserve any liquid in the pan. Once cool, discard core from each tomatillo. Combine tomatills, tomatillo liquid, juice from one lime, cilantro, red onions, serrano peppers, and 1 t salt, into a bowl and mix.
Add avocados to bowl and mash everything with a fork. Add salt and pepper to taste.

This looks really good although I'm cautious about the alteration of flavor. A normal guacamole doesn't call for tomatoes of any kind, much less tomatillos, but I have a feeling the blend of Mexican flavors will work perfectly. I think I'll try this recipe exactly and then try it with a little less red onion, swap of the Serrano peppers for 1 jalapeno seeded and diced and a dash of lemon juice.
