Strawberry Vanilla Chia Protein Pudding

Makes: 4 cups

Description: A yummy, healthy, and protein packed pudding perfect for dessert or even breakfast!

Ingredients:
2 cups  strawberries
2 cups  almond milk
3/4 cup  chia seeds
1 scoop  vanilla protein powder
1 splash  pure vanilla extract
to taste  honey

Instructions: -Blend almond milk, honey, vanilla extract, protein powder, and 2 cups strawberries until smooth.

-Put your strawberry/almond milk mixture in a bowl and add your chia seeds.

-Whisk that until it is well combined.

-Place mixture in the refrigerator for about 30 minutes (the longer you wait, the more thick it will be) until mixture resembles tapioca pudding.

-Spoon into a serving bowl and enjoy!

*Great for a quick breakfast or snack throughout the week as it should stay well in a tight seal container in the refrigerator for about a week.

I've made this many times and every single time I love it even more. It's fast, tasty and healthy. I often experiment with it by adding different fruits instead of strawberries and using different milks such as cashew, coconut, or rice. Sometimes I blend the mixture with the chia seed to change the texture. The last batch I made had bananas, walnuts, and vanilla hemp milk...... amazing.
