Makes: 6 cups
Description: This dip is awesome especially for tailgating and superbowl! So creamy and good it is a BIG hit in my house
Ingredients:
2
cloves garlic (minced)
2 Tblsp.
minced onion
1/4 cup
real butter
2 cups
heavy cream
1/4 cup
chicken broth
2/3 cup
grated romano cheese
2 tsp.
lemon juice
1/2 tsp
hot sauce
1/2 tsp
salt
1/4 cup
sour cream
2 10 oz. boxes
frozen chopped spinach
12 oz. jar
artichoke hearts, drained and chopped
4 cups
grated mozzarella cheese
1/4 cup
flour
Instructions: Cook each box spinach in microwave for around 4 minutes each, drain excess water and set aside. In a 2 qt. saucepan over med. heat, saute' garlic and onion in butter until golden brown, about 3-5 mins. Stir in the flour and cook for 1 min. Slowly whisk in the cream and broth and continue cooking until boiling. Once boiling stir in the parmesan cheese, lemon juice, hot sauce and salt stir until cheese is melted. Remove from heat and allow to cool for 5 mins. Fold in sour cream, spinach and artichoke hearts. Por all into casserole dish and top with mozzarella. Place in a 376 degree oven until chesse is golden brown and melted. Remove from oven and allow to cool for about 10 mins. For garnish add some thin sliced romano tomato on top and serve with tortilla chips or place in a bread bowl.
