Makes: 6 servings
Description: This is a great-tasting, very easy and economical dish. The kids can help you make it, and it is great served on eithe a bed of rice or noodles for Cinco de Mayo!
Ingredients:

boneless chicken breasts
2
fresh limes, juiced
1 tsp, each
thyme & paprika
1
chicken bouilion cube
1/4 tsp.
cayenne pepper
1 tsp. each
salt & pepper
2 Tbsp. each
oil & butter
Instructions:
In a bowl, mix together the thyme, paprika, cayenne, salt and pepper. Cut the chicken breasts into strips and roll them in this mixture.
In a skillet, heat the butter and oil together. Saute the chicken pieces in this for about 5 minutes. Then add the lime juice to the skillet, along with the bouillion cube and 1/2 cup of water. Lower the heat, put the lid on, and simmer till chicken is cooked through. It won't take long and it is delicious! (Make sure you spoon the liquid over the rice or noodles.)
These are a great lite lunch or supper idea and delicious!
