Raspberry Monte Cristo

Makes: 2 sandwiches

Description: This is the perfect recipe to prepare for your special loved one. It only takes a matter of minutes and its ideal for serving breakfast in bed! I like to think of this recipe as a small yet sincere gesture of gratitude and kindness...not to mention quite delicious!

Ingredients:
4  slices of bread
2  eggs
2 tbsp  milk
2 ounces  cream cheese, softened
2 ounces  raspberry perserves
2 ounces  butter
Dash  ground nutmeg
Dash  salt

Instructions: In medium bowl, beat eggs and milk together. Add the dash of salt and nutmeg, mix ? Set bowl aside.

Taking two slices of bread, spread cream cheese on one side. Taking the second two slices of remaining bread spread the raspberry preserves on one side. Form 2 sandwiches - one slice of cream cheese with one slice of preserves.

On medium to high flame, melt butter in frying pan. Take one sandwich; dip the sandwich into the milk/egg mixture. Place in frying pan. Cook sandwich on both sides until golden brown. Remove from pan placing sandwich on paper towel to absorb any excess fat from butter. Repeat with second sandwich.

Serve both sandwiches cut into triangles with fresh fruit on side. Sprinkle entire plate with powdered sugar, or drizzle maple syrup on top (as seen in photo).
