Quinoa & Sauteed Veggies

Makes: 1 1

Description: A delicious and healthy meal for anytime of the day!

Ingredients:
1/2 cup  cooked Quinoa
2  large zucchinis
1/2  onion
1  dash of garlic powder (to taste)
1  sprinkle of feta
1  dash of hot sauce (to taste)
1 tsp  coconut oil
1  egg
1  tomato

Instructions: Get a pan and warm up enough coconut oil to coat the bottom of your pan

Throw in your chopped onions and cook until they are translucent

Add garlic, veggies and cook through
Once veggies are soft, transfer them over to your plate
Add sliced tomatoes on top, a sprinkle of your precooked quinoa and a touch of feta
Add your egg to the top of that and drizzle some hot sauce over it to taste (egg can be cooked however you like it, but I like to poach my egg)

This recipe has alcohol in the marinade. Beer and worcestershire sauce with seansonings. I let mine marinade for at least 2hrs. Longer is always better.
