Makes: 4 salads
Description: A delicious alternative to Souvlaki with pita. This delicious, lemony dish is fast, easy, and inexpensive. It's also healthy, and perfect for a mid-winter treat when you're missing the warm weather.
Ingredients:
1 pound (453 g)
Pork shoulder, chop, or loin cut in 1/2-inch cubes.
1 cup (237 ml)
lemon juice
1/2 cup (119 ml)
olive oil
1 tbsp (14 g)
rosemary
1 tbsp (14 g)
thyme
1 tbsp (14 g)
oregano
2 tsp (8.4 g)
kosher salt
1 bunch
purple lettuce
1 cups (170 g)
arugula
1 cup (225 g)
grape tomatoes
1 cup (170 g)
purple onion, sliced
1 cup (225 g)
tzatziki
Instructions:
To Make the Souvlaki
Place the pork in a bowl, and add the lemon juice, olive oil, rosemary, thyme, and oregano.
Cover and place in the refrigerator for at least 30 minutes.
Then
Heat a skillet to medium.
Pour the entire bowl of pork and marinade directly into the pan and cover.
While the pork is cooking, make the salad
Chop the lettuce into bite-sized pieces, and place in a bowl.
Stir the pork, cover.
Tear the arugula leaves in half and toss with the lettuce.
Sprinkle onion slivers on top of the lettuce/arugula mixture.
Stir the pork, remove the lid.
Add the halved tomatoes and toss the salad.
Once the pork is browned, put a handful of salad on the plate.
Plop a dollop (or a DOLLOP) of tzatziki on top of the pork.
Enjoy!
