When I received my Circulon skillet, I started prepping this dish individually because it is so quick and easy. This allows me to fix my boyfriend dinner fresh, even though he may be late home for dinner.
chicken breast in pieces - frozen any manufacturer
red curry paste - Thai kitchen
sour cream or skim milk (optional)
Put skillet on medium high heat, add frozen chicken breast pieces and frozen veggies. If using fresh veggies, let the chicken brown a little bit before adding veggies. If you use a good nonstick skillet, like Circulon, you do not need to any oil to this dish. After the chicken and veggies have been cooked, add the pre-cooked pasta, the curry paste and, as needed, a couple of tablespoons of water to prevent the paste from sticking to the skillet. make sure there is enough liquid in the skillet to allow the curry paste to coat all ingredients.
You can add sour cream or milk to taste for a creamier version. If desired, add a little bit of lime juice or lemongrass (both flavors are present in the Thai Kitchen Red Curry Paste).
