Makes: 8 servings
Description: The best pasta salad! I used shell noodles for my kids beach themed birthday party.
Ingredients:
4 cups
Rotini pasta
1-2
Zucchini
.5 cup
Grape tomatoes
1
Red onion
1 bag
Pepperoni
8oz
Cheddar or Mozz cubed
1 head
Broccoli
2
Carrots
1 cup
Italian dressing
Instructions:
Cook pasta according to directions on package for al dente. Drain and rinse with cool water.
In the meantime. Chop veggies and mixins (cheese, pepperoni). As im doing 4 cups of pasta, i would want 4 cups of chopped mix ins. Veggies bitesize, i quarter up the peppperonis roughly. Cheese in small cubes.
Place drained pasta in a large bowl, adding the 4 cups veggies/meata/cheese
Add dressing, salt, pepper and stir to combine.
Chill in fridge.
*dressing/pasta/veg can be adjusted. I do an equal amount mix ins to pasta. 1cup/4cups/4cups. 1.5/6/6, 2/8/8)
A simple and delicious Summer salad that can be kept in the refrigerator for days, adding to it as you go.
