Makes: 4 Servings
This is a super easy dish I threw together one night & it ended up being a big hit! Its super simple & fast. All you need are some chicken breasts, angel hair pasta, parmesan cheese, italian dressing, garlic, and lemons.
Chicken Breasts, Cubed
Parmesan Cheese, Grated
Large Garlic Cloves, finely chopped
Angel Hair Pasta
Salt & Pepper
Cut the fat from the chicken breasts and cut it up into cubes, I will also season my chicken now with salt, pepper & ginger. Next prepare the marinade using about 1/3 of the bottle of the Italian Dressing, 3-4 finely chopped garlic cloves, and the juice from half a lemon. Put the chicken in a ziploc bag with the marinade for at least 30 minutes but overnight is ideal. Cook the Angel Hair Pasta before the chicken (about 1/2-3/4 of a box) and set to the side in a strainer. You will also want to grate about a cup of parmesan cheese before starting the chicken too. In a large skillet, pour the chicken & marinade in over medium heat and cook until chicken is done. Then add the angel hair pasta, 3-4 cup of Parmesan Cheese & more Italian Dressing (you want the Italian Dressing to evenly coat the pasta, about 3/4 of whats left in the bottle or you can add the rest of the bottle of dressing if you prefer, and cook until the pasta is warmed & Parmesan cheese has melted throughout. Then when plating this dish sprinkle the extra Parmesan cheese you have left over on top. I totally made this dish up, experiment & have fun with this! I hope you enjoy!
