Description: An easy recipe for oven rice!
Ingredients:
2 cups
Arborio rice
1 cup
Diced tomatoes
4 cups
Water
1 cup
Diced green and red peppers
Half cup
Diced onions
4 oz
Olive oil
1oz
Italian seasoning
32 oz
Fresh or frozen salmon
dash
Garlic
dash
Salt
dash
Pepper
2 oz
Olive oil for the salmon
Instructions:
Preheat the oven to 450 degrees. In the meantime, put the rice, water, onions, tomatoes and peppers in an oven-safe dish. (tip: better if the dish has a lid for easy clean-up). Mix the ingredients and add the Italian seasoning, oil, salt and pepper. Put it in the over for 30 minutes. After about 25 minutes, check to see if the rice is done and with a wooden spatula mix the rice so the Veggies can go evenly everywhere. While you are waiting for the rice, prepare the salmon for grilling. Put the salmon in aluminum foil and add 2 oz Olive oil. Add the garlic, salt, Italian seasoning and pepper. Grill it for 14 minutes, 7 minutes per side.
When the rice is ready let it cool down and serve!
