Hearty and flavorful stew that improves as it sits for a couple of days. Serve with hearty sour dough rolls and your guests will rave about your cooking.
pork sausage - ground and/or links, cooked and cut in bite size pieces
yellow onion, chopped
red pepper, chopped
garlic cloves, chopped
Italian diced tomatoes
tomato sauce, Italian spiced, if possible
pasta - any shape - cooked al dente
Mozzarella cheesem shredded
I use Tastefully Simple Seasoned salt and McCormick garlic & red pepper seasoning
In a large pan coated with non-stick cookie spray, cook the sausage, onion, pepper and garlic until meat is no longer pink; drain. Add the tomatoes, tomato sauce, mushrooms, water and broth. Bring to a boil. Reduce heat; cover and simmer 1 hour. Serve pasta (I use the small spirals cooked very al dente) and mozzarella cheese to add individually. I cook on low for about 5 hours and then refrigerate for 2 days before serving, to let the flavors blend.
