Ice Cream Sandwiches

Makes: 10 sandwiches
Description: Quick and easy homemade ice cream sandwiches. You use store box cake mix of your choice and store bought ice cream. These are delicious!
Ingredients:
1 box
Cake Mix any flavor
3
eggs large
1/2 cup
of oil
1 quart
of ice cream
Instructions: Mix cake mix, eggs and oil together. Place dough on greased cookie sheet. I like to make them into approximately 4 inch round circle and about 1/4 to 1/2 inch thick. Remember they will rise in oven. Bake at 350 degrees for 10 to 12 minutes. When cool put a generous scoop of icecream on one cookie and top with another. You can serve as you make them or freezer them for later. Wrap in freezer or saran wrap.
