Makes: 10 servings
Description: This is a classic dough, rolled paper thin and filled with anything the heart desires! These can be healthy when filled with super foods like pureed yams and even a bit of avocado and tomato! The ingredients are simple and the art is easy to learn.
Ingredients:
4
eggs
4 tablespoon
olive oil
4 tablespoon
water
1/2 teaspoon
salt
3 cups
semolina flour or bread flour
Instructions:
Prepare a clean surface, about 3 ft by 2 ft
Lightly dust with regular flour
Pile the semolina flour onto the middle of the space
Make a large well and add the oil, water, salt and eggs
Gently mix the eggs, oil and water with the fork.
The flour will incorporate into the liquid.
Continue to stir until all the flour is mixed with the liquid.
The dough should stick cleanly to itself, with no crumbs or excess moisture.
Knead for ten minutes. Best method is to knead, turn the dough 1/4 around, knead, repeat.
Wrap the dough tightly in plastic wrap and allow to rest for ten minutes.
Open the dough, cut into quarters, wrap the rest and work with one quarter at a time.
Now you can roll until the dough is paper thin (1/16th inch) thick,
Slice into two-inch wide strips.
On one half, put a dab of filling.
Fold the other half over.
Cut between the piles of filling to make squares.
Seal with the fork, making sure not to leave any openings.
If any of the ravioli tear or have holes, pile into a ceramic baking pan, cover with cheese and sauce and bake until bubbly!
Boil the good ravioli in 2 qt salted water and 2 tblsp olive oil. Boil until they float to the top!
Enjoy with your favorite pasta sauce!
