Homemade Mac N Cheese

Makes: 4 Cups

Description: This is a twist on my mom's homemade mac and cheese. The only difference is that I add curry powder for a unique flavor!

Ingredients:
2 Cups Dry  Macaroni
2 Cups  Sharp Cheddar
1/2 Cup  Mozzarella
2 TSP  Yellow Curry Powder
2 TBSP  Butter
1/4 Cup  Milk
2 TBSP  Corn Starch

Instructions: Boil pasta to your liking as you normally would, strain and set aside.

On a stove, heat butter in a pan and add corn starch to create the rue. Heat until color is golden or to preference. Add in milk, cheeses and curry powder. I will note that if you buy the block cheese, you will need to grate this beforehand or while your pasta is cooking. This is actually something I prefer to do because I think it offers a better flavor than the pre-shredded and it's cheaper in bulk. You can also add in other spices to your liking. If you're in the mood for something different, try different spices like adding a bit of garlic, onion powder, chives or even red pepper flakes for an additional kick!

Continue to stir on low heat or just enough to melt cheese so that it doesn't stick to the bottom. Remember to continue stirring. Add in pasta and coat, then move to a serving dish.

You can transfer to a baking dish and add your choice of breadcrumbs on top and baked in the oven at 350 degrees until the top is golden-brown.

You can substitute your favorite pasta as well. I have tried whole wheat, multi-grain and rice which all tasted amazing!
