Homemade Beans

Makes: 4 cups

Description: Homemade beans for a delicious Mexican Fiesta!

Ingredients:
1lb  dry pinto beans
1  large onion, chopped
1  jalapeno, chopped and seeded (unless you like it hot, then keep the membranes and seeds)
2 tablespoons  salt

Instructions: Soak beans over night. Drain and sort out for bad looking ones or stones (I've never found a stone). Put beans in big dutch oven and cover with water. Add onion, jalapeno, and salt, start to boil, uncovered. Keep close eye on them so that water does not go below bean level. Add HOT water, as needed. Cook for approximately 45 minutes or until degree of doneness is met. Enjoy!
