Makes: 1 Omelet
Description: This omelet is high in protein, all natural, healthy, and inexpensive.
Ingredients:
3
Egg Whites
1
Green Pepper, chopped
1/4 cup
Diced onions
1/4 cup
Fresh spinach
Instructions:
I usually cool my fresh veggies and ingredients a few minutes before in a separate skillet, but if you like the crunch you don't have to do that.
Whisk your egg whites and get your skillet really hot before you add them. Not smoking hot, though.
Add your eggs to the pan. Make sure the pan is small enough that the 3 eggs cover the surface, but not too big so that your omelet is too thin. Let your whisked eggs cook, untouched for a few minutes. You will start seeing little bubbles, similar to a pancake. Throw in your ingredients and if you can, let it set 1-2 min with a lid on pan before you fold and plate, just to make sure everything is done.
With just the right hint of pumpkin, these pancakes are a perfect early morning fill me up with a GREAT cup of joe!
