fat free cream cheese
jar diced pimentos
fat free shredded cheese
reduced fat Mexican shredded cheese
low fat mayo
Mix all cheeses, mayo, pimentos, paprika. Cover one bread slice with pimento cheese then cap off with another slice of bread. Spray skillet or griddle with non-stick spray. Brown the sandwhich on one side and turn once. Serve
