Makes: 4 servings
Description: This is a great healthy alternative to nachos!
Ingredients:
1lb
lean turkey
3 tsp
cumin, other spices as desired
2 tbsp
red vinegar
1
cucumber, diced
1/2 cup
red onion, diced
1/2
lemon squeezed
4
pieces of pita bread, oven toasted and cut into triangles
2
roma tomatoes, diced
2 tbsp
olive oil
1 cup
greek yogurt
2 tbsp
sour cream
1 cup
white onion diced
2 cups
feta cheese
Instructions:
Add together the cucumber, red onion and tomatoes in a bowl. Toss with olive oil and red wine vinegar. Set aside.
In another bowl, assemble 1 cup of the feta, lemon juice, greek yogurt and sour cream. Set aside.
Oven toast the pita bread (usually 350 degree for 5 minutes or so) until hard. Then cut the pita bread into triangles (nacho chip shape).
Add the lean turkey, cumin and white onion into a pan. Cook on stove until brown.
Now assemble together. Place the toasted pita first, lean turkey, yogurt mixture and cucumber mixture. Use the other cup of feta to put on top of the cucumber mixture.
