Makes: 1 Dozen
Description: Gluten free cookies with chunks of peaches.
Ingredients:
2 large
Eggs
2 and 3/4 cups
Flour (almond, corn, rice, etc)
3 tablespoons
Sugar
10 tablespoons
Butter (softened)
Fresh or canned peaches
Cut into small pieces
To taste
Salt, cinnamon, or any other spices
Instructions: Mix all ingredients together, adding the peaches last. If, after adding the peaches, the mix is still thin and runny, add more flour until it does not drip off the spoon. Bake for about 20 minutes at 375 degrees. Enjoy with a drizzle of honey or whipped cream.

This was actually my first time making them and they were a big hit with me and a couple of my friends! They are really simple to make!
